Cooking Class - Magnificent Middle Eastern

Thursday June 3, 2021, 6pm. 

Otis Orchards, WA

I LOVE Middle Eastern food. I'm so excited to share this go-to plant-based dinner with you!  It's one of my favorites. I am restraining myself from overwhelming you (and me) with a ton of different dishes, so we will be making and eating Mujadarah - a savory lentil and rice dish flavored with onions and cumin. This is such an easy and affordable and delicious one pot meal. I also want to show you how to make plant-based and vegan Spanakopita - a Greek 'cheese' and spinach appetizer. I'm still debating which dessert to make, so that will be a surprise. To round out the meal we will have a salad and my favorite plant-based ranch dressing from Nora Cooks.

Covid Precautions:  We will be holding this class in a room that allows for cross ventilation, so windows will be open, please dress appropriately. The class is limited to 30 people. Masks that cover your nose and mouth are required at all times except while eating.  If you cannot wear a mask, please wait to come to a class after Covid is no longer a risk.

 

ATTENTION: I will be watching Covid case numbers and if they are rising sharply in our area, we will likely cancel. I will make that decision at least three days before the class – please watch your emails (and junk folders) for notifications.

A Year of Anxiety: Managing Anxiety and Stress During 2020 and Covid-19

2020 has been one of the most stressful years in recent history. Many of us struggle with fears of the unknown, and lack of control.  In addition to counseling, and in some cases, medication, there is research that shows that lifestyle and nutrition can profoundly affect how we manage anxiety and stress. Additionally, lifestyle and nutrition can help improve the effectiveness of counseling and medication. This presentation will focus on simple lifestyle and nutrition tips for improving mental health for anyone.

 

Annalee Wilson is a practicing family nurse practitioner who has a keen interest in how lifestyle and nutrition impact health, including mental health. She is board certified by the American Board of Lifestyle Medicine, a certification body for medical professionals.

She will also demonstrate some simple recipes for foods that naturally fight illness.  Join us for this live-stream event and learn how to boost your immunity!

 

Valerie Scrafford has worked as a staff nurse, preceptor and charge nurse as well as an adjunct nursing instructor. Valerie completed the Certificate program for Plant-Based Nutrition from the T. Colin Campbell Center for Nutritional Studies.
